“Pork tuna,” or Chianti tuna, is an ancient preparation of pork that is traditional of this region of Tuscany. In an era where there weren’t any refrigerators, farmers would salt cure pork for three days before cooking it in white wine, bay leaves and spices and conserve it in oil for months so as not to waste any meat. After a long marinating period, the meat would become tender with a delicate flavor surprisingly similar to that of tuna.
Recommended uses: serve cold or lukewarm along with cannellini beans and sage, with a chestnut flour focaccia, or with a side dish of potatoes. Ideal as an appetizer or main course.

Davide Balduini Bio :

Davide Balduini comes from a family of Tuscan restaurateurs who have passed down recipes and tradition that have served him well in Milan’s restaurant scene. He began his career at his family’s restaurant before going on to work for many years in catering and events before opening his restaurant “La cucina de’ Mibabbo” in Milan.
Together with chef Roberta Magnani he proposes a traditional Tuscan cuisine, drawing inspiration from various territories of the region and pairing it with traditional preparations and contemporary techniques.
