Brodetto alla Vastese, among all the various interpretations from the Adriatic Coast to Romagna to Molise, is the one with the fastest cooking time and freshest flavor. Tomato puree isn’t used, but a fresh, local tomato (ideally the Mezzo Tempo tomato) and the green horn pepper. In the broth there’s a vast range of fish and shellfish that are cooked whole, traditionally in an earthenware pot. A “poor dish” that is rich in flavor and a freshness that fully embodies the intensity of Mediterranean cuisine.
Recommended uses: served warm with a bread bruschetta or mixed with water to cook pasta in, ideally with spaghetti spezzati, tubetti pasta or capellini pasta.

Jean Pierre Soria Bio :

Jean Pierre Soria is one of the most passionate interpreters of Abruzzese cuisine and in particular the seafood tradition of Vasto, the region where he grew up and is strongly bound to.
After various work experiences in his father’s restaurants and in catering for fashion brands, he decided to open his own restaurant, composed of a small kitchen and few covers.
Since 2012, when his cuisine was discovered by Slowfood and brought to the Salone del Gusto di Torino, his little restaurant has become a true culinary destination, particularly for its celebrated brodetto alla vastese, which remains one of the most renowned interpretations on the entire Adriatic Coast.
