Spaghetti alla Vittorio is a family recipe which sees the use of squid ink added to scampi, tuna, squid and pesto. The pesto, which could seem to be a non-Sardinian ingredient, is a vestige of the Tarbachin culture of Ligurian origins, present for centuries in certain pockets of Sardinia.
Recommended uses: sauce for spaghetti, risottos, or on bread crostini with bottarga.

Luca Poma represents the second generation of the historic restaurant Da Vittorio on San Pietro Island in Carloforte, in the south of Sardinia.
For over 40 years the Poma family has served, besides their various interpretations of Carlofortino red tuna, their beloved Spaghetti alla Vittorio.
Today Luca continues the family tradition, proud of preserving his roots and sharing them beyond Sardinia’s borders.
